if you are what you eat, then i am a tomato from italy.
this is my popcorn.
Yesterday I combined a few of my favorite things, and served it on fresh bread for an appetizer.
in this order, place in bowl:
tomatoes {chop them up}
mozzarella {chopped up}
a few cloves of garlic, chopped, made into garlic confit. {saute with evoo for ten minutes}
good olive oil and balamic vingear - mix together.
fresh bread topped with tomato & mozz concoction.
ps: sorry no measurements ... i just use the mostly trusty eye.
none too pretty. but sure is delish.
i usually add fresh basil from my basil plant.
but haven't picked her out just yet. soon one will come home with me.

ReplyDeleteCherry tomatoes are amazing. I love mixing the yellow, orange and red babies with green basil for popping color. A yummy spin on this classic recipe is to rub the tomatoes on olive oil and skewer over a grill (toasting bread on the grill as well) until slightly charred. It tastes delish hot off the grill or refrigerated with the garlic confit for a few hours. Any leftover tomatoes can be pureed into a summertime gazpacho. I'm getting hungry...

Also. That does not look "not pretty".. quite the opposite. I'm ready to eat it straight from the computer screen. Sigh.
ohmygosh this looks amazing - such a great idea! tomato and mozarella may one of my favorite dishes althought sometimes i leave out the cheese and just have the tomatos with a little olive oil & balsamic - yum!
